As a freelance graphic designer, how much should I charge a non-profit for designing some banners & a pamphlet?

You should charge by the hour. Estimate how long this is all going to take you and multiply that by how much you think your time is worth. Never work cheaply or for free just to get your name out there, all you will do is gain a reputation for being a pushover.
